  • 6 large hard-boiled eggs, chopped
  • 1 cup mayonnaise

  • 1/2 teaspoon black pepper
  • 1/4 cup finely chopped celery (optional)

Instructions

  1. Cook the pasta according to package directions until al dente. Drain and rinse well with cold water to stop cooking. Set aside.
  2. In a large bowl, mash the yolks of the hard-boiled eggs with a fork until smooth.
  3. Add the mayonnaise, mustard, pickle relish, white vinegar, salt, and pepper to the mashed yolks. Mix until the dressing is completely smooth and creamy.
  4. Gently fold in the chopped egg whites, celery, and red onion, if using, into the dressing mixture.
