Easy Ground Beef Dorito Casserole

A simple, cheesy, and crunchy baked casserole featuring ground beef and Nacho Cheese Doritos, perfect for a quick weeknight dinner.

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 (10.75 ounce) can condensed cream of chicken soup
  • 1 (10 ounce) can condensed cream of mushroom soup
  • 1 cup milk
  • 1 teaspoon taco seasoning
  • 2 cups shredded cheddar cheese, divided
  • 1 (4 ounce) can diced green chiles, drained
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (10 ounce) bag Nacho Cheese Doritos, lightly crushed

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Cook the ground beef and onion in a large skillet over medium heat until the beef is browned and the onion is soft. Drain off any excess grease.
  3. In a large bowl, combine the cooked beef mixture, cream of chicken soup, cream of mushroom soup, milk, taco seasoning, half of the shredded cheese, green chiles, and black beans. Mix well.
  4. Spread half of the crushed Doritos evenly over the bottom of the prepared baking dish.
  5. Pour the meat and soup mixture over the layer of chips and spread it out evenly.
  6. Top the mixture with the remaining crushed Doritos.
  7. Sprinkle the remaining half of the shredded cheese over the top layer of chips.
  8. Bake for 25 to 30 minutes, or until the casserole is bubbly and the cheese is melted and lightly golden.
  9. Let the casserole rest for 5 minutes before serving.

Notes

  • You can substitute Cool Ranch Doritos for a different flavor profile.
  • For a make-ahead option, assemble the casserole completely, cover it, and refrigerate for up to 24 hours. Add 10 minutes to the baking time if baking directly from the refrigerator.
  • Serve with sour cream or salsa on the side.
