6 cups chicken or vegetable broth
1 tablespoon soy sauce
1 teaspoon grated fresh ginger
1 clove garlic, minced
1 bag (about 12-16 ounces) frozen dumplings or potstickers
1 cup chopped bok choy or spinach
1/2 cup sliced mushrooms (optional)
1 teaspoon sesame oil
Green onions, sliced, for garnish
Chili garlic sauce, for serving (optional)
Instructions
Pour the broth, soy sauce, ginger, and minced garlic into a large pot. Bring the mixture to a boil over medium-high heat.
Once boiling, carefully add the frozen dumplings to the pot. Do not overcrowd the pot; cook in batches if necessary.
Reduce the heat to medium-low to maintain a gentle simmer. Cook for 8 to 10 minutes, or until the dumplings are heated through and float to the surface. Check one dumpling to ensure the filling is hot.
Add the bok choy or spinach and mushrooms (if using) to the simmering soup. Cook for 2 to 3 minutes until the greens are wilted.
Remove the pot from the heat. Stir in the sesame oil.
Ladle the soup and dumplings into bowls. Garnish with sliced green onions and serve immediately with chili garlic sauce on the side if you prefer spice.
Notes
You can substitute miso paste for soy sauce for a different flavor profile. Dissolve 1 tablespoon of miso paste in a small amount of hot broth before stirring it into the soup at the end.
For a heartier soup, add 1 cup of cooked ramen or rice noodles during the last 3 minutes of cooking.
If you want a clearer broth, skim any foam that rises to the surface during the initial boil.
