Easy Apple Strudel with Puff Pastry

Make a classic Austrian dessert easily using store-bought puff pastry for a flaky, spiced apple filling.

  • 1 package (14.1 ounces) frozen puff pastry, thawed
  • 4 medium Granny Smith apples, peeled, cored, and thinly sliced
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 cup raisins, soaked in warm water for 10 minutes and drained
  • 2 tablespoons lemon juice
  • 2 tablespoons unsalted butter, melted
  • 1/4 cup breadcrumbs (plain)
  • 1 large egg, beaten (for egg wash)
  • 2 tablespoons powdered sugar, for dusting

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine the sliced apples, granulated sugar, cinnamon, nutmeg, soaked raisins, and lemon juice. Mix gently to coat the apples evenly.
  3. Unfold the thawed puff pastry sheets onto a lightly floured surface. If using one large sheet, roll it slightly thinner into a rectangle about 10×14 inches.
  4. Brush the surface of the pastry lightly with half of the melted butter. Sprinkle the breadcrumbs evenly over the pastry, leaving a 1-inch border on all sides.
  5. Spoon the apple mixture over the breadcrumbs, leaving the border clear.
  6. Fold the short sides of the pastry over the filling. Then, starting from one long side, tightly roll the pastry into a log, sealing the edges by pressing them together. Place the strudel seam-side down on the prepared baking sheet.
  7. Brush the top of the strudel with the beaten egg wash. Cut three or four small slits on the top to allow steam to escape.
  8. Bake for 30 to 35 minutes, or until the pastry is golden brown and puffed.
  9. Let the strudel cool on the baking sheet for 10 minutes before transferring it to a wire rack to cool slightly more.
  10. Dust generously with powdered sugar before slicing and serving warm.

Notes

  • For a richer flavor, toast the breadcrumbs lightly in butter before sprinkling them on the pastry.
  • If you prefer a traditional dough, substitute the puff pastry with a homemade strudel dough, rolled very thin.
  • Serve with vanilla ice cream or unsweetened whipped cream.
