Enjoy this delightful, easy-to-make Baked Chicken Cordon Bleu. We focus on crispiness and keeping the cheese perfectly tucked inside. This recipe is elegant enough for company but simple for a weeknight meal.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 4 slices Swiss cheese
  • 4 thin slices deli ham
  • 1 cup all-purpose flour
  • 2 large eggs, lightly beaten
  • 1 1/2 cups Panko breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 2 tablespoons olive oil (for drizzling)

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a baking sheet.
  2. Place each chicken breast between two sheets of plastic wrap. Pound them to about 1/4-inch thickness.
  3. Place one slice of Swiss cheese and one slice of ham onto each flattened chicken breast.
  4. Fold the chicken tightly around the filling, tucking in the sides. Secure with toothpicks if needed.
  5. Set up a dredging station: one plate with flour, one shallow bowl with beaten eggs, and one plate with Panko, Parmesan, salt, pepper, and garlic powder mixed well.
  6. Dredge each chicken roll first in flour, shaking off excess.
  7. Dip the floured chicken into the egg mixture, letting excess drip off.
  8. Coat thoroughly in the Panko mixture, pressing gently so the crumbs adhere well.
  9. Place the coated chicken rolls seam-side down on the prepared baking sheet.
  10. Lightly drizzle or spray the tops with olive oil to help them crisp.
  11. Bake for 20 to 25 minutes, or until the internal temperature reaches 165°F (74°C) and the crust is golden brown.
  12. Let the chicken rest for 5 minutes before removing any toothpicks and serving.

Notes

  • For extra crispiness, you can briefly pan-sear the chicken rolls on all sides before baking.
  • If you prefer a creamier texture, serve with a simple Dijon or Swiss cheese sauce made separately.
  • Make sure the chicken is pounded evenly so it cooks through at the same time.
