Make this incredibly easy and creamy Loaded Twice Baked Potato Casserole. It captures all the comforting flavors of your favorite loaded baked potatoes in one simple, shareable dish. Perfect for holidays or a cozy night in.

  • 6 large Russet potatoes, scrubbed
  • 1 tablespoon olive oil
  • 1 cup milk, warmed
  • 4 tablespoons unsalted butter
  • 1 cup shredded sharp cheddar cheese, plus more for topping
  • 1/2 cup sour cream
  • 1/2 cup heavy cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 slices bacon, cooked and crumbled
  • 2 green onions, sliced

Instructions

  1. Preheat your oven to 400°F (200°C). Pierce the potatoes several times with a fork. Rub with olive oil and bake directly on the oven rack for 50 to 60 minutes, until soft.
  2. Once cool enough to handle, slice each potato in half lengthwise. Scoop the flesh into a large bowl, leaving a small border in the skins.
  3. Add the warm milk, butter, 1 cup of cheddar cheese, sour cream, heavy cream, salt, and pepper to the potato flesh.
  4. Mash everything together until smooth and creamy. Do not overmix.
  5. Stir in half of the crumbled bacon and half of the sliced green onions.
  6. Spoon the mixture back into the reserved potato skins. Place the filled skins in a 9×13 inch baking dish.
  7. If you prefer a true casserole presentation, you can dice the scooped potato flesh and mix all ingredients together, then spread the mixture evenly into the baking dish.
  8. Top the casserole generously with remaining shredded cheddar cheese.
  9. Bake uncovered at 375°F (190°C) for 20 to 25 minutes, until the cheese is melted and golden brown.
  10. Garnish with remaining bacon and green onions before serving.

Notes

  • For a make-ahead option, prepare the casserole up to the final cheese topping. Cover and refrigerate for up to 2 days. Add about 10 minutes to the baking time if baking straight from the refrigerator.
  • You can use pre-cooked bacon bits for extra speed.
  • If you prefer a tangier flavor, substitute plain Greek yogurt for the sour cream.
