  • 4 large egg yolks
  • 3/4 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 2 cups whole milk
  • 2 tablespoons butter
  • 1 teaspoon vanilla extract
  • 3 medium ripe bananas, thinly sliced

Instructions

  1. Prepare your pie crust according to your preferred method. If using a traditional crust, bake it according to package directions until lightly golden; let cool completely.
  2. In a medium saucepan, whisk together the egg yolks, sugar, cornstarch, and salt until smooth.
  3. Gradually whisk in the milk until fully combined.
  4. Place the saucepan over medium heat. Cook, stirring constantly with a wooden spoon or whisk, until the mixture thickens significantly and begins to bubble. This takes about 8 to 10 minutes. Do not stop stirring.
  5. Remove the saucepan from the heat. Stir in the butter and vanilla extract until the butter is melted and incorporated.
  6. Immediately pour about one cup of the hot custard mixture over the sliced bananas in the cooled pie shell. Gently stir to coat the bananas.
  7. Pour the remaining custard mixture over the bananas and smooth the top.
  8. Press plastic wrap directly onto the surface of the custard to prevent a skin from forming.
  9. Chill the pie in the refrigerator for at least 4 hours, or until the filling is firm.
  10. Before serving, remove the plastic wrap. You can top with whipped cream if desired. Slice and enjoy your creamy pie.
