  • 1 can (15 ounces) creamed corn
  • 1 can (15 ounces) whole kernel corn, drained
  • 1 cup sour cream
  • 1/2 cup (1 stick) unsalted butter, melted
  • 2 large eggs

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, combine the Jiffy Corn Muffin Mix, creamed corn, drained whole kernel corn, sour cream, eggs, and melted butter. Mix until just combined; do not overmix.
  3. Pour the batter evenly into the prepared baking dish.
  4. Bake for 45 to 55 minutes, or until the top is golden brown and a toothpick inserted near the center comes out clean.
  5. Let the cornbread casserole cool for about 10 minutes before slicing and serving.
