Make this creamy, pub-style Beer Cheese Dip in just 15 minutes. It is the perfect savory appetizer for game days, parties, or when you crave a rich dip for pretzels and chips.

  • 1 tablespoon unsalted butter
  • 1 tablespoon all-purpose flour
  • 1 cup milk (whole milk works best)
  • 1/2 teaspoon Dijon mustard
  • 1/4 teaspoon garlic powder
  • Pinch of cayenne pepper
  • 1/4 teaspoon salt
  • 8 ounces sharp cheddar cheese, shredded
  • 4 ounces cream cheese, softened
  • 1/2 cup of your favorite light beer (lager or pale ale recommended)

Instructions

  1. Melt the butter in a medium saucepan over medium heat.
  2. Whisk in the flour to create a roux. Cook for one minute, stirring constantly.
  3. Gradually whisk in the milk until the mixture is smooth. Continue cooking until the sauce thickens slightly, about 3 to 5 minutes.
  4. Stir in the Dijon mustard, garlic powder, cayenne pepper, and salt.
  5. Reduce the heat to low. Add the shredded cheddar cheese one handful at a time, stirring until each addition is completely melted and smooth before adding more.
  6. Stir in the softened cream cheese until fully incorporated and smooth.
  7. Slowly pour in the beer while stirring continuously until the dip is creamy and uniform. Do not let it boil.
  8. Remove from heat and serve immediately with soft pretzels, chips, or vegetables.

Notes

  • Shred your own cheese; pre-shredded cheese contains additives that prevent smooth melting.
  • Use a mild beer so the flavor does not overpower the cheese.
