This is an easy, creamy zucchini soup recipe perfect for a quick weeknight meal. We use a small potato to naturally thicken the soup, giving it a wonderful, velvety texture without needing heavy cream. It uses fresh garden zucchini and simple ingredients for a comforting bowl.

Ingredients

  • 4 medium zucchini, chopped
  • 1 small potato, peeled and chopped (optional, for extra creaminess)
  • 1 tablespoon olive oil
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1/2 cup heavy cream (or cashew cream for vegan)
  • Salt and black pepper to taste
  • Fresh basil, chopped (for garnish)

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat.
  2. Add the chopped onion and cook until softened, about 5 minutes.
  3. Stir in the minced garlic and cook for 1 minute more until fragrant.
  4. Add the chopped zucchini and potato (if using) to the pot. Stir well.
  5. Pour in the vegetable broth. Bring the mixture to a boil, then reduce heat and simmer until the zucchini and potato are very tender, about 15-20 minutes.
  6. Remove the pot from the heat. Using an immersion blender, blend the soup until completely smooth and creamy. Alternatively, carefully transfer the soup in batches to a standard blender and blend until smooth, then return to the pot.
  7. Stir in the heavy cream (or cashew cream). Heat gently until warmed through; do not boil after adding cream.
  8. Season generously with salt and pepper to your liking.
  9. Serve hot, garnished with fresh basil.

Notes

  • For a vegan version, substitute the heavy cream with 1/2 cup of full-fat cashew cream or skip the cream entirely for a lighter, broth-based soup.
  • If you prefer a low-carb option, omit the potato completely. You can still achieve creaminess by blending thoroughly or adding a tablespoon of nutritional yeast.
  • Taste the broth before adding salt; store-bought broths vary widely in sodium content.
