  • 3 pounds russet potatoes, peeled and cubed
  • 1 large onion, chopped
  • 4 cups chicken broth
  • 1 (10.5 ounce) can cream of chicken soup
  • 1 cup heavy cream
  • 8 ounces cream cheese, cubed
  • 1 cup shredded cheddar cheese
  • 4 slices bacon, cooked and crumbled
  • 2 green onions, sliced (for garnish)
  • Salt and black pepper to taste

Instructions

  1. Place the cubed potatoes and chopped onion into your slow cooker.
  2. Pour the chicken broth over the potatoes and onions.
  3. Cook on low for 6 to 8 hours, or on high for 3 to 4 hours, until potatoes are tender.
  4. Carefully mash some of the potatoes against the side of the slow cooker to slightly thicken the soup, or use an immersion blender for a smoother texture.
