2 large eggs

1/4 cup pumpkin puree
1 teaspoon vanilla extract
1 cup grated zucchini (about 1 medium zucchini), squeezed dry
1/2 cup chopped pecans or walnuts (optional)
Instructions
Grease your crockpot well with non-stick cooking spray or butter.
In a large bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, and cloves.
In a separate bowl, beat the eggs and sugar until well combined.
Whisk in the vegetable oil, pumpkin puree, and vanilla extract until smooth.
Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
Gently fold in the grated zucchini and chopped nuts (if using).
Pour the batter into the prepared crockpot.
Cover and cook on high for 1.5 to 2 hours, or on low for 2.5 to 3.5 hours, until a wooden skewer inserted into the center comes out clean.
