Ingredients

Scale
  • 1 pound breakfast sausage, cooked and drained
  • 2 cups frozen shredded hash browns, thawed
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 12 large eggs
  • 1 cup milk (any kind)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Spread the cooked sausage evenly over the bottom of the prepared baking dish.
  3. Layer the thawed hash browns over the sausage.
  4. Sprinkle both the cheddar and Monterey Jack cheese over the hash brown layer.
  5. In a large bowl, whisk together the eggs, milk, salt, pepper, and garlic powder until well combined.
  6. Pour the egg mixture slowly and evenly over the sausage, hash browns, and cheese layers.
  7. Cover the baking dish tightly with aluminum foil.
  8. Bake for 30 minutes covered.
  9. Remove the foil and bake for an additional 10 to 15 minutes, or until the eggs are set and the top is lightly golden.
  10. Let the egg bake rest for 5 minutes before slicing and serving.

Notes

  • For make-ahead preparation, assemble the entire casserole (steps 1 through 5) the night before. Cover tightly and refrigerate for up to 24 hours. Before baking, let it sit at room temperature for 20 minutes, then add 5 to 10 minutes to the initial covered baking time.
  • You can substitute bacon or ham for the sausage.
  • This recipe is naturally gluten-free if you confirm your hash browns do not contain additives.
