Instructions

  1. Place the egg yolk, mustard, lemon juice, and salt into the jar of an immersion blender or a small food processor bowl.
  2. Blend these ingredients together for about 15 seconds until they are well combined and slightly lighter in color.
  3. Begin slowly drizzling the oil into the mixture while the blender or processor is running on low speed. You must add the oil very slowly at first, just drop by drop.
  4. Once the mixture starts to thicken and emulsify (this usually happens after you have added about 1/4 cup of oil), you can begin pouring the remaining oil in a very thin, steady stream.
  5. Continue blending until all the oil is incorporated and the mayonnaise is thick and creamy.
  6. Taste the mayonnaise and adjust the salt or add a few more drops of lemon juice if you desire more tang.
  7. Transfer the finished mayonnaise to an airtight container and chill before serving.

Notes

  • If your mayonnaise breaks (looks watery or separates), you can often fix it. Place one teaspoon of warm water or another egg yolk in a clean bowl. Slowly whisk the broken mayonnaise into this new base, one teaspoon at a time, until it emulsifies again.
  • Use room temperature ingredients for the best chance of a stable emulsion.
