1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
1 tablespoon olive oil
1 head broccoli, cut into florets
1 red bell pepper, sliced
1 carrot, thinly sliced
3 cloves garlic, minced
1/4 cup honey
1/4 cup soy sauce (low sodium recommended)
2 tablespoons rice vinegar
1 teaspoon grated fresh ginger
1 teaspoon cornstarch mixed with 2 teaspoons cold water (slurry)
Optional: Sesame seeds and sliced green onions for garnish
Instructions
In a small bowl, whisk together the honey, soy sauce, rice vinegar, and ginger. Set aside.
Heat the olive oil in a large skillet or wok over medium-high heat.
Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
Add the broccoli, bell pepper, and carrots to the same skillet. Stir fry for 3-4 minutes until vegetables are crisp-tender.
Add the minced garlic to the vegetables and cook for 30 seconds until fragrant.
Return the cooked chicken to the skillet.
Pour the prepared honey garlic sauce over the chicken and vegetables. Bring the sauce to a simmer.
Stir the cornstarch slurry once more and pour it into the simmering sauce. Stir constantly until the sauce thickens, about 1 minute.
Remove from heat immediately. Garnish with sesame seeds and green onions if you wish. Serve hot over rice or noodles.
Notes
To keep your chicken juicy, do not overcrowd the pan when searing. Cook in batches if necessary.
For a spicier kick, add a pinch of red pepper flakes to the sauce.
You can substitute other quick-cooking vegetables like snap peas or mushrooms.
