  • 1 teaspoon Vanilla Extract

  • 1/2 cup Semi-sweet Chocolate Chips (optional, for richness)
  • 1/2 cup Chopped Walnuts or Pecans (optional)

Instructions

  1. Lightly grease an 8×8 inch pan and line it with parchment paper, leaving an overhang.
  2. In a medium saucepan, combine the sugar, milk, and maple syrup.
  3. Heat the mixture over medium heat, stirring constantly until the sugar dissolves completely.
  4. Attach a candy thermometer to the side of the pan without touching the bottom.
  5. Continue to cook, stirring occasionally, until the mixture reaches 234 degrees Fahrenheit (soft-ball stage).
  6. Remove the pan from the heat immediately.
  7. Stir in the butter, vanilla extract, and salt until the butter melts completely.
  8. If using chocolate chips, add them now and stir until smooth.
  9. Let the mixture cool undisturbed until it reaches 110 degrees Fahrenheit. Do not rush this cooling step.
  10. Once cooled, beat the mixture vigorously by hand or with an electric mixer until it loses its gloss and thickens, becoming dull and spreadable. This takes several minutes.
  11. If using nuts, gently fold them in now.
  12. Quickly pour the fudge into the prepared pan and smooth the top.
  13. Let the fudge set completely at room temperature for several hours, or chill briefly for faster setting.
  14. Cut into small squares before serving.

  • Use only pure maple syrup for the best flavor. Pancake syrup will not work.
  • Accurate temperature is key for creamy texture. A candy thermometer is recommended.
