Prepare a simple, flavorful dinner using chicken breasts and broccoli florets cooked together on one pan with a sweet and savory honey garlic sauce.

Ingredients

Scale
  • 1.5 lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 large head of broccoli, cut into florets
  • 2 tablespoons olive oil
  • 1/4 cup soy sauce (low sodium preferred)
  • 1/4 cup honey
  • 2 tablespoons rice vinegar
  • 1 tablespoon minced garlic
  • 1 teaspoon grated fresh ginger
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 tablespoon cornstarch
  • 2 tablespoons water

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
  2. In a small bowl, whisk together the soy sauce, honey, rice vinegar, minced garlic, ginger, and red pepper flakes to make the sauce base. Set aside half of this mixture for basting later.
  3. In a separate small bowl, mix the cornstarch and 2 tablespoons of water to create a slurry. Whisk this slurry into the remaining half of the sauce base.
  4. Place the cut chicken pieces and broccoli florets onto the prepared baking sheet. Drizzle with olive oil and toss to coat lightly.
  5. Pour the thickened sauce mixture over the chicken and broccoli on the pan. Toss everything gently until evenly coated. Spread the mixture into a single layer.
  6. Bake for 15 minutes.
  7. Remove the pan from the oven. Brush the reserved half of the thin sauce mixture over the chicken and broccoli.
  8. Return the pan to the oven and bake for another 5 to 7 minutes, or until the chicken is cooked through (internal temperature reaches 165°F or 74°C) and the sauce has thickened slightly and caramelized.
  9. Serve immediately.

Notes

  • For crispier broccoli, you can roast the broccoli alone for 5 minutes before adding the chicken and sauce.
  • If you do not have fresh ginger, use 1/2 teaspoon of ground ginger instead.
  • Serve this dish over rice or quinoa for a complete meal.
