A delightful and easy pasta dish packed with fresh, vibrant vegetables. Perfect for a light spring meal or a quick weeknight dinner.

Ingredients

  • 1 pound pasta (such as penne, rotini, or farfalle)
  • 2 tablespoons olive oil
  • 1 medium zucchini, chopped
  • 1 medium yellow squash, chopped
  • 1 red bell pepper, chopped
  • 1 cup broccoli florets
  • 1 cup cherry tomatoes, halved
  • 2 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese (optional)
  • Salt and freshly ground black pepper to taste
  • Fresh basil leaves, for garnish (optional)

Instructions

  1. Cook pasta according to package directions. Drain, reserving about 1/2 cup of pasta water.
  2. While pasta is cooking, heat olive oil in a large skillet over medium heat.
  3. Add zucchini, yellow squash, bell pepper, and broccoli to the skillet. Cook for 5-7 minutes, or until vegetables are tender-crisp.
  4. Add cherry tomatoes and minced garlic to the skillet. Cook for another 2-3 minutes until tomatoes soften and garlic is fragrant.
  5. Add the drained pasta to the skillet with the vegetables.
  6. Toss to combine, adding a little of the reserved pasta water if the dish seems dry.
  7. Season with salt and pepper to taste.
  8. Serve immediately, topped with Parmesan cheese and fresh basil if desired.

Notes

  • Feel free to use any vegetables you have on hand! Asparagus, peas, or spinach are also great additions.
  • For a creamier sauce, you can add a splash of heavy cream or a tablespoon of butter at the end.
  • A squeeze of lemon juice can add a bright, fresh flavor.
