1 (11.3 ounce) can refrigerated biscuit dough (8 biscuits)
1/2 cup pizza sauce
1/2 cup shredded mozzarella cheese
1/4 cup mini pepperoni
1 tablespoon olive oil
1/2 teaspoon dried oregano
Instructions
Preheat your oven to 375°F (190°C). Lightly grease a 12-cup muffin tin.
Separate the biscuit dough into individual biscuits. Cut each biscuit into quarters.
In a medium bowl, combine the cut biscuit pieces, pizza sauce, mozzarella cheese, and mini pepperoni. Stir gently until everything is evenly coated.
Spoon the mixture into the prepared muffin cups, filling each about two-thirds full.
In a small bowl, whisk together the olive oil and dried oregano. Brush the top of each muffin with the olive oil mixture.
Bake for 12-15 minutes, or until the biscuits are golden brown and cooked through.
Let the muffins cool in the tin for a few minutes before transferring them to a wire rack.
Notes
You can use regular pepperoni cut into smaller pieces if mini pepperoni is not available.
Add other pizza toppings like diced bell peppers, cooked sausage, or mushrooms for variety.
These muffins are great for meal prepping. Store them in an airtight container in the refrigerator for up to 3 days.
