  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon garlic powder
  • 1 large egg
  • 3/4 cup milk
  • 1/4 cup vegetable oil
  • 1/2 cup pizza sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup mini pepperoni, chopped

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Grease a 12-cup muffin tin or line it with paper liners.
  2. In a large bowl, whisk together the flour, baking powder, salt, oregano, and garlic powder.
  3. In a separate bowl, whisk the egg, milk, and vegetable oil until combined.
  4. Pour the wet ingredients into the dry ingredients. Mix until just combined; do not overmix.
  5. Gently fold in the pizza sauce, mozzarella cheese, and chopped pepperoni.
  6. Spoon the batter evenly into the prepared muffin cups, filling each about two-thirds full.
  7. Bake for 15 to 18 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • You can substitute different cheeses like provolone or a pizza blend.
  • For freezer lunches, cool the muffins completely, then place them in a freezer-safe bag. Reheat in the microwave or oven.
