1 pound ground beef or sausage
1 (10 ounce) can Rotel diced tomatoes and green chilies, undrained
1 (16 ounce) package Velveeta cheese, cut into cubes
1 tablespoon taco seasoning
Instructions
Brown the ground beef or sausage in a large skillet over medium heat. Drain off any excess grease completely.
Stir the undrained Rotel tomatoes and green chilies into the skillet with the meat. Heat for 2 minutes.
Reduce the heat to low. Add the cubed Velveeta cheese to the skillet. Stir constantly until the cheese is fully melted and the dip is smooth and creamy.
Stir in the taco seasoning until it is well combined.
Serve the hot Rotel dip immediately with tortilla chips or crackers.
Notes
For a slow cooker version, brown the meat first, drain, then combine all ingredients in a small slow cooker. Cook on low for 1 hour, stirring occasionally until smooth.
You can substitute the ground beef with ground sausage for a different flavor profile.
If the dip thickens too much while serving, stir in a tablespoon of milk or water to reach your desired consistency.
