  • 1 pound raw shrimp, peeled and deveined
  • 2 cups cold, cooked, day-old white rice
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, minced
  • 1 large egg, lightly beaten
  • 1/2 cup frozen peas and carrots mix
  • 3 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon sesame oil
  • 1/2 teaspoon white pepper
  • 2 green onions, sliced (for garnish)

Instructions

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the shrimp and cook until pink and opaque, about 2-3 minutes. Remove the shrimp from the skillet and set aside.
  3. Add a little more oil if the pan is dry. Add the minced garlic and ginger. Cook for 30 seconds until fragrant.
  4. Pour the beaten egg into the skillet. Scramble quickly until just set, then break it into small pieces.
  5. Add the cold rice, breaking up any clumps with your spatula. Stir fry for 3-4 minutes until heated through.
  6. Add the frozen peas and carrots. Cook for 2 minutes.
  7. Return the cooked shrimp to the skillet.
  8. Pour the soy sauce and sesame oil over the mixture. Sprinkle with white pepper.
  9. Toss everything together quickly until well combined and heated through, about 1 minute.
  10. Remove from heat. Garnish with sliced green onions before serving immediately.

  • Using cold, day-old rice is key for achieving the proper texture in fried rice.
