  • 1 cup chopped cooked corned beef
  • 1 cup shredded Swiss cheese
  • 1/2 cup sauerkraut, well drained and squeezed dry
  • 1/2 cup mayonnaise
  • 1/4 cup Thousand Island dressing
  • 4 ounces cream cheese, softened
  • 1/4 teaspoon caraway seeds (optional)
  • Rye bread slices or crackers, for serving

Instructions

  1. Prepare your slow cooker by lightly greasing the inside if necessary.
  2. In a medium bowl, combine the chopped corned beef, Swiss cheese, drained sauerkraut, mayonnaise, Thousand Island dressing, softened cream cheese, and caraway seeds, if using. Mix until all ingredients are just combined.
  3. Transfer the mixture to the slow cooker.
  4. Cook on LOW for 1.5 to 2 hours, stirring halfway through, until the dip is hot and completely melted and creamy.
  5. Serve the hot Reuben Dip directly from the slow cooker with toasted rye bread slices or your favorite crackers for dipping.

Notes

  • For an extra layer of flavor, toast your rye bread slices lightly before serving alongside the dip.
  • If you do not have a slow cooker, you can bake this dip in an oven-safe dish at 350°F (175°C) for 20 minutes, or until bubbly and heated through.
  • Squeeze as much liquid as possible from the sauerkraut; excess moisture can make the dip watery.
