Ingredients
Scale
1.5 lbs skirt steak or flank steak, trimmed
1/4 cup lime juice (about 2 limes)
2 tablespoons olive oil, divided
1 tablespoon soy sauce
1 tablespoon Worcestershire sauce
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon smoked paprika
1/2 teaspoon dried oregano
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon salt
1/4 teaspoon black pepper
1 large red bell pepper, sliced
1 large green bell pepper, sliced
1 large yellow onion, sliced
Optional: Tortillas, sour cream, salsa, guacamole for serving
Instructions
Prepare the marinade: In a medium bowl, whisk together the lime juice, 1 tablespoon of olive oil, soy sauce, Worcestershire sauce, cumin, chili powder, paprika, oregano, garlic powder, onion powder, salt, and pepper.
Marinate the steak: Place the trimmed steak in a resealable plastic bag or shallow dish. Pour the marinade over the steak, ensuring it is fully coated. Seal and refrigerate for at least 30 minutes, or up to 4 hours for deeper flavor.
Prepare the vegetables: Slice the bell peppers and onion into thin strips.
Sear the steak: Heat 1 tablespoon of olive oil in a large, heavy skillet (cast iron works best for that restaurant sizzle) over medium-high heat until shimmering. Remove the steak from the marinade, letting excess drip off, and place it in the hot skillet. Do not overcrowd the pan; cook in batches if necessary. Sear for 2-3 minutes per side until nicely browned but still slightly pink inside for medium-rare. Remove the steak and let it rest on a cutting board.
Sauté the vegetables: Add the sliced peppers and onions to the same skillet. Cook, stirring occasionally, for 5 to 7 minutes until they are tender-crisp and slightly charred.
Slice the steak: While the vegetables cook, thinly slice the rested steak against the grain into strips.
Combine and serve: Return the sliced steak to the skillet with the vegetables. Toss everything together quickly to reheat the steak and coat it in any remaining pan juices. Serve immediately with warm tortillas and your favorite toppings for sizzling steak fajitas.
Notes
For the best flavor, use skirt steak. If you prefer a leaner cut, flank steak works well, but be sure to slice it thinly against the grain.
To achieve the ‘sizzling’ effect, heat your serving platter or cast iron skillet until very hot just before serving the fajitas.
If you want to make this a one pot steak fajitas meal, you can cook the steak and vegetables together, but cook the steak first, remove it, cook the vegetables, and then return the sliced steak to heat through at the end.
