This is the best easy one-pot Stuffed Pepper Soup you will make. It captures the hearty, savory flavor of classic stuffed bell peppers in a comforting soup format, ready fast for a satisfying family meal.

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 cup uncooked white rice, long grain
  • 1 (28 ounce) can crushed tomatoes
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 4 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: Shredded cheddar cheese for topping

Instructions

  1. Brown the ground beef in a large pot or Dutch oven over medium heat. Drain off any excess fat.
  2. Add the olive oil, chopped onion, and bell peppers to the pot. Cook until the vegetables soften, about 5 to 7 minutes.
  3. Stir in the minced garlic and cook for 1 minute until fragrant.
  4. Add the uncooked rice, crushed tomatoes, diced tomatoes, beef broth, Worcestershire sauce, oregano, and basil. Stir well to combine.
  5. Bring the soup to a boil, then reduce the heat to low, cover, and simmer for 20 minutes, or until the rice is tender.
  6. Season with salt and pepper to your taste.
  7. Serve hot, topping each bowl with shredded cheese if desired.

Notes

  • You can easily make this soup vegetarian by substituting the ground beef with lentils or plant-based ground meat substitute.
  • For a richer flavor, use low-sodium beef broth.
  • If you prefer a thicker soup, you can add 1 extra tablespoon of tomato paste when adding the liquids.
