2 medium eggplants
1 cup all-purpose flour
2 large eggs, beaten
1 cup seasoned breadcrumbs
1/2 cup grated Parmesan cheese (for breading)
Olive oil, for frying
2 cups marinara sauce
8 ounces fresh mozzarella cheese, sliced
1/4 cup fresh basil leaves, chopped
Salt and pepper to taste
Instructions
Slice the eggplants into 1/2-inch thick rounds. Sprinkle both sides with salt and let them sit for 20 minutes to draw out moisture. Pat them dry.
Set up your breading station: one shallow dish with flour, one with beaten eggs, and one with breadcrumbs mixed with Parmesan cheese.
Dredge each eggplant slice first in the flour, shaking off excess. Dip into the egg, then coat thoroughly in the breadcrumb mixture.
Heat about 1/2 inch of olive oil in a large skillet over medium heat. Fry the eggplant slices in batches until golden brown on both sides, about 3-4 minutes per batch. Drain on paper towels.
Preheat your oven to 375°F (190°C).
In a small oven-safe baking dish, spread a thin layer of marinara sauce on the bottom.
Begin stacking: place one eggplant slice down, top with sauce, a slice of mozzarella, and a sprinkle of basil. Repeat the layers until you have used all the ingredients, ending with a mozzarella slice on top.
Bake for 15-20 minutes, or until the cheese is melted, bubbly, and lightly browned.
Let the stacks rest for 5 minutes before serving.
Notes
Drying the eggplant after salting helps prevent oil absorption.
You can bake the eggplant slices instead of frying for a lighter version, brushing them with oil first.
