  • 4 ears of corn, husked
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tablespoons lime juice
  • 1 clove garlic, minced
  • 1/4 teaspoon chili powder
  • Pinch of cayenne pepper (optional)
  • Salt to taste
  • 1/4 cup crumbled cotija cheese
  • 2 tablespoons chopped fresh cilantro

Instructions

  1. Preheat your grill to medium-high heat.
  2. Grill the corn for about 10-12 minutes, turning occasionally, until kernels are tender and slightly charred.
  3. While the corn is grilling, mix together the mayonnaise, sour cream, lime juice, minced garlic, chili powder, cayenne pepper (if using), and salt in a small bowl.
  4. Once the corn is cooked, carefully spread the mayonnaise mixture evenly over each ear of corn.
  5. Sprinkle the cotija cheese and chopped cilantro over the top.
  6. Serve immediately and enjoy!

Notes

  • For a spicier elote, add more chili powder or cayenne pepper to the mayonnaise mixture.
  • If you don’t have a grill, you can roast the corn in the oven at 400°F (200°C) for 20-25 minutes, turning halfway through.
  • Cotija cheese is traditional, but you can substitute with Parmesan cheese if needed.
