1 cup dried chickpeas, soaked overnight
1/4 cup fresh parsley, chopped
1/4 cup fresh cilantro, chopped
1/4 cup onion, finely chopped
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon cayenne pepper (optional)
2 tablespoons all-purpose flour
1 teaspoon baking powder
Vegetable oil, for frying
4 pitas
For the Tahini Sauce:
1/2 cup tahini
1/4 cup lemon juice
2 cloves garlic, minced
2-4 tablespoons water
Salt to taste
Instructions
Drain and rinse the soaked chickpeas.
In a food processor, combine the chickpeas, parsley, cilantro, onion, garlic, cumin, coriander, salt, black pepper, and cayenne pepper (if using).
Pulse until the mixture is finely chopped but not a paste.
Add the flour and baking powder to the food processor and pulse a few more times to combine.
Form the mixture into small patties or balls.
Heat about 1 inch of vegetable oil in a skillet over medium-high heat.
Carefully fry the falafel in batches until golden brown and crispy on all sides, about 3-4 minutes per side.
Remove the falafel from the skillet and drain on paper towels.
While the falafel is frying, prepare the tahini sauce. In a small bowl, whisk together the tahini, lemon juice, and minced garlic.
Gradually add water, one tablespoon at a time, until the sauce reaches your desired consistency. Season with salt to taste.
Warm the pitas.
Stuff the pitas with the falafel.
Drizzle generously with tahini sauce.
Notes
For a quicker preparation, you can use canned chickpeas, but ensure they are thoroughly drained and rinsed.
Adjust the amount of lemon juice and water in the tahini sauce to achieve your preferred flavor and thickness.
Serve with your favorite chopped vegetables like tomatoes, cucumbers, or lettuce.
