This flourless chocolate cake is rich, decadent, and surprisingly easy to make. It’s naturally gluten-free, perfect for those with dietary restrictions or anyone craving an intensely chocolatey dessert.

  • 8 ounces bittersweet chocolate, chopped
  • 1 cup (2 sticks) unsalted butter, cut into pieces
  • 1 1/2 cups granulated sugar
  • 6 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch springform pan.
  2. Melt the chopped chocolate and butter together in a heatproof bowl set over a saucepan of simmering water. Stir until smooth, then remove from heat.
  3. In a separate bowl, whisk together the granulated sugar, eggs, vanilla extract, and salt until well combined.
  4. Gradually whisk the melted chocolate mixture into the egg mixture until smooth and fully incorporated.
  5. Pour the batter into the prepared springform pan.
  6. Bake for 30-35 minutes, or until the cake is set around the edges but still slightly soft in the center. A toothpick inserted near the center should come out with moist crumbs attached.
  7. Let the cake cool in the pan on a wire rack for at least 15 minutes before removing the sides of the springform pan.
  8. Allow the cake to cool completely before serving.

  • For a deeper chocolate flavor, use chocolate with a higher cocoa percentage.
  • Serve with fresh berries, whipped cream, or a dusting of powdered sugar.
