2 boneless, skinless chicken breasts, cut into 1-inch pieces
1 tablespoon olive oil
1 large yellow onion, thinly sliced
2 cloves garlic, minced
1 teaspoon dried thyme
1/2 cup beef broth
1/4 cup dry white wine (optional)
1 tablespoon Worcestershire sauce
Salt and black pepper to taste
4 slices Gruyere cheese
2 tablespoons chopped fresh parsley, for garnish
Instructions
Season the chicken pieces with salt and pepper.
Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned on all sides, about 5-7 minutes. Remove chicken from skillet and set aside.
Add the sliced onion to the same skillet. Cook, stirring occasionally, until softened and lightly browned, about 8-10 minutes.
Add the minced garlic and dried thyme to the skillet and cook for 1 minute more until fragrant.
Pour in the beef broth, white wine (if using), and Worcestershire sauce. Bring to a simmer, scraping up any browned bits from the bottom of the skillet.
Return the chicken to the skillet. Reduce heat to medium-low, cover, and simmer for 10-12 minutes, or until the chicken is cooked through and tender.
Remove the lid and place a slice of Gruyere cheese over each portion of chicken. Cover the skillet for 1-2 minutes, or until the cheese is melted and bubbly.
Garnish with fresh parsley before serving.
Notes
For an extra rich flavor, you can caramelize the onions slowly over low heat for a longer period.
If you don’t have Gruyere cheese, Swiss cheese or provolone can be used as a substitute.
