Make these Baked Cinnamon Sugar French Toast Muffins for an easy, portable breakfast. They capture the comforting flavor of classic French toast in a perfect, grab-and-go muffin shape. This recipe is great for busy mornings or meal prepping.

Ingredients

Scale
  • 1 loaf (about 16 ounces) thick-cut bread (like brioche or challah), cubed
  • 6 large eggs
  • 1 1/2 cups milk (whole milk works best)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Pinch of salt
  • 1/4 cup granulated sugar (for the batter)
  • 1/4 cup (4 tablespoons) unsalted butter, melted
  • For the topping:
  • 1/2 cup brown sugar, packed
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 4 tablespoons unsalted butter, melted

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a standard 12-cup muffin tin well, or use liners.
  2. Cube the bread into roughly 1-inch pieces. Place the bread cubes evenly into the prepared muffin cups, filling each about two-thirds full.
  3. In a large bowl, whisk together the eggs, milk, vanilla extract, cinnamon, nutmeg, salt, and 1/4 cup of granulated sugar until fully combined.
  4. Slowly pour the egg mixture over the bread cubes in the muffin tin, letting the liquid soak in for about 5 minutes. Gently press down on the bread to help absorption.
  5. Drizzle 1 teaspoon of the melted butter over the top of the bread cubes in each cup.
  6. In a small bowl, mix together the brown sugar, 2 tablespoons of granulated sugar, and 1 teaspoon of cinnamon for the topping.
  7. Drizzle the remaining melted butter over the tops of the muffins. Sprinkle the cinnamon sugar topping generously over each muffin cup.
  8. Bake for 20 to 25 minutes, or until the tops are golden brown and the center is set. A toothpick inserted into the center should come out mostly clean.
  9. Let the muffins cool in the tin for 5 minutes before carefully removing them to a wire rack to cool slightly. Serve warm.

Notes

  • Using thick-cut bread like challah or brioche yields the best texture.
  • You can prepare the batter and let the bread soak overnight in the refrigerator for an even richer flavor. Bake in the morning.
  • These muffins store well in an airtight container at room temperature for up to 2 days, or refrigerated for up to 4 days.
  • Reheat briefly in the microwave or toaster oven before serving.
