A delightful and easy-to-make strawberry shortcake recipe, perfect for a light and refreshing dessert. It features fluffy biscuits, fresh strawberries, and creamy whipped cream.

  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter, cold and cubed
  • 1/2 cup milk
  • 1 pound fresh strawberries, hulled and sliced
  • 2 tablespoons granulated sugar (for strawberries)
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar (for whipped cream)
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, 2 tablespoons granulated sugar, baking powder, and salt.
  3. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
  4. Pour in the milk and stir until just combined. Do not overmix.
  5. Turn the dough out onto a lightly floured surface and gently pat it into a 3/4-inch thick round.
  6. Cut out 4-6 biscuits using a 2-inch round cutter. Place them on the prepared baking sheet.
  7. Bake for 12-15 minutes, or until golden brown. Let cool slightly.
  8. While the biscuits are baking, toss the sliced strawberries with 2 tablespoons of granulated sugar in a bowl. Let them sit for about 10 minutes to macerate.
  9. In a separate bowl, whip the heavy cream with the powdered sugar and vanilla extract until stiff peaks form.
  10. To assemble, split each biscuit in half. Spoon some macerated strawberries onto the bottom half of each biscuit, top with whipped cream, and then place the top half of the biscuit on. Add more strawberries and whipped cream as desired.

Notes

  • For sweeter strawberries, you can add a little more sugar.
  • Ensure your butter is very cold for the best biscuit texture.
  • You can make the whipped cream ahead of time, but it’s best to assemble the shortcakes just before serving.
