Ingredients
Scale
1 cup all-purpose flour
1/2 cup unsweetened cocoa powder
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/2 cup mashed ripe avocado (about 1 medium avocado)
1/2 cup chocolate chips (optional)
Instructions
Preheat your oven to 350°F (175°C). Grease and flour an 8×8 inch baking pan.
In a medium bowl, whisk together flour, cocoa powder, baking powder, and salt. Set aside.
In a large bowl, cream together softened butter and sugar until light and fluffy.
Beat in the eggs one at a time, then stir in the vanilla extract.
Add the mashed avocado to the butter mixture and beat until well combined and smooth.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
If using, fold in the chocolate chips.
Spread the batter evenly into the prepared baking pan.
Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs attached.
Let the brownies cool completely in the pan before cutting into squares.
Notes
Ensure your avocado is ripe for the best texture and flavor.
For an even richer chocolate flavor, use dark chocolate chips.
You can substitute half of the all-purpose flour with whole wheat flour for added fiber.
