Enjoy these incredibly fudgy, naturally sweet date brownies. We use Medjool dates to create a rich, decadent chocolate experience that feels indulgent but skips refined sugar. This recipe is simple, flourless, and truly satisfying.

Ingredients

Scale
  • 1 cup Medjool dates, pitted and soaked
  • 1/2 cup hot water (for soaking dates)
  • 3/4 cup unsweetened cocoa powder
  • 1/2 cup melted coconut oil or butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips (optional, for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line an 8×8 inch baking pan with parchment paper.
  2. Soak the pitted dates in hot water for 10 minutes to soften them. Drain the dates, reserving 1/4 cup of the soaking liquid.
  3. In a food processor, combine the softened dates and the reserved soaking liquid. Process until you have a smooth, thick paste. You need this to be very smooth for the best texture.
  4. Add the cocoa powder, melted oil/butter, eggs, vanilla extract, and salt to the food processor. Blend until completely smooth and combined. Scrape down the sides as needed.
  5. Pour the batter into the prepared baking pan. If using, sprinkle chocolate chips evenly over the top.
  6. Bake for 20 to 25 minutes. The edges should look set, but the center should still be slightly soft for a fudgy texture. Do not overbake.
  7. Let the brownies cool completely in the pan before lifting them out using the parchment paper and cutting them into squares.

Notes

  • Using high-quality cocoa powder makes a big difference in the final chocolate flavor.
  • Medjool dates provide the best moisture and sweetness for this recipe. Ensure they are very soft before blending.
  • Cooling time is crucial; these brownies firm up significantly as they cool, resulting in that desired fudgy texture.
