2 large potatoes
4 tablespoons unsalted butter, melted
3 cloves garlic, minced
1/4 cup grated Parmesan cheese
2 tablespoons chopped fresh parsley
Salt to taste
Black pepper to taste
Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Wash the potatoes thoroughly. Do not peel them.
Place a potato between two wooden spoons or chopsticks to prevent cutting all the way through.
Using a sharp knife, make thin slices across the potato, about 1/8 inch apart.
Repeat with the second potato.
Carefully spread the potato slices open like an accordion.
In a small bowl, whisk together the melted butter, minced garlic, Parmesan cheese, parsley, salt, and pepper.
Brush the garlic butter mixture generously over the accordion potatoes, making sure to get some between the slices.
Place the potatoes cut-side up on the prepared baking sheet.
Bake for 30-40 minutes, or until the edges are golden brown and crispy.
Serve hot and enjoy your crispy, garlicky potato snack!
Notes
For extra crispiness, you can brush with more butter halfway through baking.
Feel free to add your favorite spices like paprika or chili powder to the butter mixture.
