Learn to make juicy pork chops with a simple garlic herb butter sauce. This quick skillet dinner is perfect for a weeknight meal.

  • 1 tablespoon olive oil
  • 4 boneless pork chops
  • Salt and freshly ground black pepper, to taste
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1/4 cup chicken broth
  • 1 tablespoon lemon juice

Instructions

  1. Pat the pork chops dry with paper towels. Season both sides generously with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat.
  3. Add the pork chops to the hot skillet and sear for 3-4 minutes per side, until golden brown.
  4. Reduce the heat to medium. Add the butter, minced garlic, rosemary, and thyme to the skillet.
  5. Cook, stirring the butter and garlic mixture, for about 1-2 minutes until fragrant.
  6. Pour in the chicken broth and lemon juice. Bring to a simmer, scraping up any browned bits from the bottom of the skillet.
  7. Return the pork chops to the skillet and spoon the garlic butter sauce over them.
  8. Continue to cook for another 3-5 minutes, or until the pork chops are cooked through and reach an internal temperature of 145°F (63°C).
  9. Remove the pork chops from the skillet and let them rest for a few minutes before serving with the garlic butter sauce spooned over the top.

Notes

  • For thicker pork chops, you may need to adjust the cooking time.
  • Feel free to add other herbs like parsley or chives to the sauce.
  • Ensure your skillet is large enough to hold all the pork chops without overcrowding.
