1.5 pounds sirloin steak, cut into 1-inch cubes
1.5 pounds baby potatoes, halved or quartered
4 tablespoons unsalted butter
4 cloves garlic, minced
1 teaspoon dried rosemary
1 teaspoon dried thyme
Salt to taste
Black pepper to taste
2 tablespoons olive oil
Fresh parsley, chopped for garnish (optional)
Instructions
Preheat your oven to 400°F (200°C).
In a large bowl, toss the potatoes with 1 tablespoon of olive oil, salt, pepper, rosemary, and thyme. Spread them in a single layer on a baking sheet.
Roast the potatoes for 20-25 minutes, or until tender and slightly browned.
While the potatoes are roasting, pat the steak bites dry with paper towels. Season them generously with salt and pepper.
In a large skillet, melt 2 tablespoons of butter with 1 tablespoon of olive oil over medium-high heat.
Add the steak bites to the skillet in a single layer, being careful not to overcrowd the pan. Sear for 1-2 minutes per side until browned. You may need to do this in batches.
Remove the steak bites from the skillet and set aside.
Add the remaining 2 tablespoons of butter to the skillet. Once melted, add the minced garlic and cook for about 30 seconds until fragrant.
Return the steak bites to the skillet with the garlic butter.
Add the roasted potatoes to the skillet with the steak bites. Toss everything together to coat.
Cook for another 2-3 minutes, allowing the steak bites to finish cooking to your desired doneness and the flavors to meld.
Garnish with fresh parsley if desired before serving.
Notes
For crispier potatoes, ensure they are in a single layer on the baking sheet and don’t overcrowd the pan.
Adjust the cooking time for the steak bites based on your preferred level of doneness (rare, medium, well-done).
Feel free to add other vegetables like broccoli florets or bell peppers to the pan during the last 10 minutes of cooking.
