  • 1.5 lbs baby potatoes, halved or quartered
  • 3 tablespoons olive oil
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the potatoes with 2 tablespoons of olive oil, rosemary, thyme, garlic powder, salt, and pepper.
  3. Spread the seasoned potatoes in a single layer on a large baking sheet.
  4. Roast the potatoes for 20 minutes.
  5. While the potatoes are roasting, toss the chicken thighs with the remaining 1 tablespoon of olive oil, salt, and pepper.
  6. After 20 minutes, remove the baking sheet from the oven. Add the seasoned chicken thighs to the baking sheet with the potatoes, ensuring everything is in a single layer.
  7. Return the baking sheet to the oven and roast for another 20-25 minutes, or until the chicken is cooked through and the potatoes are tender and browned.
  8. Serve hot.
