  • 12 ounces linguine
  • 2 tablespoons olive oil
  • 1 pound large shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes
  • 1/2 cup dry white wine
  • 1/2 cup chicken or vegetable broth
  • 1/4 cup unsalted butter
  • Juice of 1 lemon
  • 1/4 cup chopped fresh parsley
  • Salt and freshly ground black pepper to taste

Instructions

  1. Cook linguine according to package directions. Reserve 1 cup of pasta water before draining.
  2. While pasta cooks, heat olive oil in a large skillet over medium-high heat.
  3. Add shrimp to the skillet and cook for 1-2 minutes per side, until pink and cooked through. Remove shrimp from skillet and set aside.
  4. Add minced garlic and red pepper flakes to the skillet and cook for about 30 seconds until fragrant.
  5. Pour in white wine and scrape up any browned bits from the bottom of the skillet. Let it simmer for 1 minute.
  6. Add chicken broth and butter to the skillet. Stir until butter is melted.
  7. Stir in lemon juice and parsley. Season with salt and pepper.
  8. Add drained linguine and cooked shrimp to the skillet. Toss to coat everything in the sauce.
  9. If the sauce is too thick, add a little reserved pasta water, a tablespoon at a time, until it reaches your desired consistency.
  10. Serve immediately.

Notes

  • For a richer sauce, you can use half-and-half instead of chicken broth.
  • Add a handful of cherry tomatoes or some asparagus for extra vegetables.
  • A squeeze of fresh lemon juice just before serving adds extra brightness.
