  • 1 cup warm water (105-115F)
  • 2 1/4 teaspoons active dry yeast
  • 1 teaspoon granulated sugar
  • 3 1/2 cups all-purpose flour, plus more for dusting
  • 1 teaspoon salt
  • 1 large egg, beaten (for egg wash)
  • 2 tablespoons baking soda
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon chopped fresh parsley
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper

Instructions

  1. In a large bowl, combine warm water, yeast, and sugar. Let sit for 5-10 minutes until foamy.
  2. Add flour and salt to the yeast mixture. Mix until a shaggy dough forms.
  3. Turn dough onto a floured surface and knead for 5-7 minutes until smooth and elastic.
  4. Place dough in a greased bowl, cover, and let rise in a warm place for 1 hour, or until doubled in size.
  5. Preheat oven to 425F. Line a baking sheet with parchment paper.
  6. In a small bowl, mix melted butter, Parmesan cheese, minced garlic, parsley, garlic powder, and black pepper.
  7. Dissolve baking soda in 6 cups of water in a shallow pan.
  8. Punch down dough and divide into small pieces. Roll each piece into a bite-sized ball.
  9. Dip each pretzel bite into the baking soda water for 30 seconds, then place on the prepared baking sheet.
  10. Brush each pretzel bite with the egg wash.
  11. Brush each pretzel bite with the garlic parmesan butter mixture.
  12. Bake for 12-15 minutes, or until golden brown.
  13. Serve warm.

  • For an extra garlicky flavor, you can add more minced garlic to the butter mixture.
