  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 425 degrees F (220 degrees C).
  2. In a large bowl, toss the cut potatoes with the olive oil until evenly coated.
  3. Spread the potatoes in a single layer on a large baking sheet. Do not overcrowd the pan.
