Ingredients

Scale
  • 1.5 pounds boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1/4 cup soy sauce
  • 2 tablespoons Shaoxing wine (or dry sherry)
  • 1 tablespoon cornstarch
  • 1/4 teaspoon white pepper
  • 2 tablespoons vegetable oil, divided
  • 4 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1/2 cup chicken broth
  • 1/4 cup rice vinegar
  • 1/4 cup hoisin sauce
  • 3 tablespoons sugar
  • 1 tablespoon soy sauce
  • 1 teaspoon Sriracha (or more, to taste)
  • 1 teaspoon cornstarch mixed with 2 teaspoons water
  • 1/4 cup chopped scallions, for garnish
  • 1/4 cup toasted sesame seeds, for garnish

Instructions

  1. In a bowl, toss chicken pieces with soy sauce, Shaoxing wine, cornstarch, and white pepper. Let marinate for at least 15 minutes.
  2. Heat 1 tablespoon of vegetable oil in a wok or large skillet over medium-high heat. Add chicken in a single layer (cook in batches if necessary) and cook until browned and cooked through, about 5-7 minutes. Remove chicken from wok and set aside.
  3. Add the remaining 1 tablespoon of vegetable oil to the wok. Add minced garlic and grated ginger and stir-fry for about 30 seconds until fragrant.
  4. Pour in chicken broth, rice vinegar, hoisin sauce, sugar, soy sauce, and Sriracha. Bring to a simmer and cook for 2-3 minutes until the sauce slightly thickens.
  5. Stir in the cornstarch slurry and cook, stirring constantly, until the sauce thickens further.
  6. Return the cooked chicken to the wok and toss to coat evenly with the sauce.
  7. Serve hot, garnished with chopped scallions and toasted sesame seeds.

Notes

  • For a spicier kick, add more Sriracha or a pinch of red pepper flakes to the sauce.
  • If you don’t have Shaoxing wine, dry sherry is a good substitute.
  • Ensure your wok or skillet is hot before adding the chicken for a good sear.
