A quick and easy blended carrot soup with a warm ginger kick, perfect for a healthy and delicious meal.

Ingredients

  • 2 cups chopped carrots
  • 1 cup vegetable broth
  • 1/2 inch fresh ginger, peeled and grated
  • 1/4 cup milk (dairy or non-dairy)
  • 1 teaspoon olive oil
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a saucepan, heat olive oil over medium heat. Add chopped carrots and sauté for 2-3 minutes.
  2. Add vegetable broth and grated ginger to the saucepan.
  3. Bring to a boil, then reduce heat and simmer for 10-12 minutes, or until carrots are tender.
  4. Carefully transfer the mixture to a blender.
  5. Add milk to the blender.
  6. Blend until smooth and creamy.
  7. Season with salt and black pepper to taste.
  8. Pour into bowls and serve warm.

Notes

  • For a richer flavor, you can use chicken broth instead of vegetable broth.
  • Add a pinch of cayenne pepper for a little heat.
  • Garnish with fresh parsley or a swirl of cream.
