- 2 cups chopped carrots
- 1 cup vegetable broth
- 1/2 inch fresh ginger, peeled and grated
- 1/4 cup milk (dairy or non-dairy)
- 1 teaspoon olive oil
- Salt to taste
- Black pepper to taste
- In a saucepan, heat olive oil over medium heat. Add chopped carrots and sauté for 2-3 minutes.
- Add vegetable broth and grated ginger to the saucepan.
- Bring to a boil, then reduce heat and simmer for 10-12 minutes, or until carrots are tender.
- Carefully transfer the mixture to a blender.
- Add milk to the blender.
- Blend until smooth and creamy.
- Season with salt and black pepper to taste.
- Pour into bowls and serve warm.
Notes
- For a richer flavor, you can use chicken broth instead of vegetable broth.
- Add a pinch of cayenne pepper for a little heat.
- Garnish with fresh parsley or a swirl of cream.
