1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
1/2 cup (1 stick) unsalted butter, melted
1 1/2 cups all-purpose flour
1 teaspoon ground ginger
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/4 teaspoon ground nutmeg
1/2 cup packed light brown sugar
1/2 cup unsalted butter, softened
1/2 cup molasses
1 large egg
8 ounces cream cheese, softened
1/2 cup granulated sugar
1 teaspoon vanilla extract
1 large egg
Instructions
Preheat your oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang for easy removal.
Prepare the crust: Mix graham cracker crumbs and 1/4 cup sugar in a bowl. Pour in melted butter and mix until combined. Press firmly into the bottom of the prepared pan.
Prepare the gingerbread layer: In a large bowl, whisk together flour, ginger, cinnamon, cloves, and nutmeg.
In a separate bowl, beat together 1/2 cup brown sugar and 1/2 cup softened butter until creamy. Beat in molasses and 1 egg until just combined.
Gradually add the dry ingredients to the wet ingredients, mixing on low speed until a soft dough forms. Spread this dough evenly over the crust.
Prepare the cheesecake layer: Beat the softened cream cheese and 1/2 cup sugar until smooth. Mix in vanilla extract and 1 egg until just blended.
Pour the cheesecake mixture evenly over the gingerbread layer.
Bake for 35 to 40 minutes, or until the cheesecake layer is mostly set but still has a slight jiggle in the center.
Let the bars cool completely on a wire rack. Once cool, refrigerate for at least 3 hours before cutting into bars.
Notes
You can use dark molasses for a stronger gingerbread flavor.
