1 3/4 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground cloves
1/4 teaspoon ground nutmeg
1/4 cup packed brown sugar
1/4 cup molasses
2 large eggs
1 1/2 cups milk
1/3 cup melted unsalted butter
1 teaspoon vanilla extract
Instructions
Preheat your waffle iron according to the manufacturer’s directions.
In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, ginger, cloves, and nutmeg.
Stir in the brown sugar.
In a separate bowl, whisk together the eggs, molasses, milk, melted butter, and vanilla extract.
Pour the wet ingredients into the dry ingredients. Mix until just combined; do not overmix the batter.
Pour the batter onto the hot waffle iron and cook until golden brown and crispy, following your waffle iron’s guidelines.
Serve immediately with your favorite toppings.
Notes
For extra spice, add a pinch of black pepper to the dry ingredients.
You can make the batter ahead of time and store it in the refrigerator for up to 24 hours. You may need to thin it slightly with a splash of milk before cooking.
