Ingredients

Scale
  • 1 3/4 cups all-purpose flour
  • 1 3/4 cups granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons poppy seeds
  • 1/2 cup unsalted butter, softened
  • 3 large eggs
  • 1 cup whole milk
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons fresh lemon juice (for glaze)

Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C). Grease and flour a 9-inch round cake pan.
  2. In a large bowl, whisk together the flour, sugar, baking powder, salt, and poppy seeds.
  3. Add the softened butter, eggs, milk, lemon juice, and lemon zest to the dry ingredients.
  4. Beat with an electric mixer on medium speed until the batter is smooth, about 2 minutes. Scrape down the sides of the bowl as needed.
  5. Pour the batter into the prepared cake pan.
  6. Bake for 30 to 35 minutes, or until a wooden pick inserted into the center comes out clean.
  7. Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
  8. While the cake cools, prepare the glaze: Whisk together the powdered sugar and 2 tablespoons of fresh lemon juice until smooth.
  9. Drizzle the lemon glaze evenly over the cooled cake. Let the glaze set before serving.

Notes

  • You can use fresh lemons for the best flavor in both the cake and the glaze.
  • This cake stays moist for several days when stored in an airtight container at room temperature.
  • Feel free to double the glaze recipe if you prefer a thicker coating.
