Make soft, savory drop biscuits using gluten-free flour, sharp cheddar cheese, and fresh garlic flavor.

  • 2 cups gluten-free all-purpose flour blend (with xanthan gum)
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried parsley
  • 1/2 cup cold unsalted butter, cut into small pieces
  • 1 cup shredded sharp cheddar cheese
  • 3/4 cup cold buttermilk (or milk with 1 teaspoon lemon juice)
  • 2 cloves fresh garlic, minced
  • 1 tablespoon melted butter (for brushing)

Instructions

  1. Preheat your oven to 425 degrees Fahrenheit. Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the gluten-free flour blend, baking powder, salt, garlic powder, and parsley.
  3. Cut the cold butter into the dry ingredients using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  4. Stir in the shredded cheddar cheese and the minced fresh garlic until evenly distributed.
  5. Pour in the cold buttermilk all at once. Use a fork to mix just until the dough comes together. Do not overmix; the dough will be sticky.
  6. Drop rounded tablespoons of dough onto the prepared baking sheet, leaving about 2 inches between each biscuit.
  7. Bake for 12 to 15 minutes, or until the tops are golden brown.
  8. Remove from the oven. Brush the tops immediately with the melted butter. Serve warm.

Notes

  • Use a gluten-free flour blend that already contains xanthan gum for the best texture. If your blend does not contain it, add 1 teaspoon of xanthan gum to the dry ingredients.
  • For richer flavor, substitute half of the buttermilk with heavy cream.
  • If you prefer a less sticky dough, chill the dough for 10 minutes before dropping onto the sheet.
