A recipe for soft, moist gluten-free cookies made with ricotta cheese and bright lemon flavor.

  • 1 cup whole milk ricotta cheese, drained for 30 minutes
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Zest of 2 large lemons
  • 1/4 cup fresh lemon juice
  • 2 cups gluten-free all-purpose flour blend (with xanthan gum)
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • For the Glaze: 1 cup powdered sugar, 2 tablespoons fresh lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, whisk together the drained ricotta cheese and granulated sugar until smooth.
  3. Beat in the eggs one at a time, followed by the vanilla extract, lemon zest, and lemon juice. Mix until just combined.
  4. In a separate medium bowl, whisk together the gluten-free flour blend, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until a soft, sticky dough forms. Do not overmix.
  6. Drop rounded tablespoons of dough onto the prepared baking sheets, leaving about 2 inches between each cookie. They will spread slightly.
  7. Bake for 12 to 15 minutes, or until the edges are lightly golden and the centers look set.
  8. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  9. Prepare the glaze by whisking the powdered sugar and lemon juice until smooth. Drizzle the glaze over the cooled cookies. Allow the glaze to set before serving.

Notes

  • Drain the ricotta cheese using a fine-mesh sieve lined with cheesecloth or a coffee filter set over a bowl for at least 30 minutes to remove excess moisture. This prevents gummy cookies.
  • Use a high-quality gluten-free all-purpose blend that contains xanthan gum for the best texture.
  • For a stronger lemon flavor, add 1 teaspoon of lemon extract along with the zest and juice.
  • If you prefer a thicker glaze, use less lemon juice in the glaze mixture.
