  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups sliced yellow squash (about 1.5 lbs)

  • 1/2 cup grated Parmesan cheese
  • 1/4 cup milk (or dairy-free milk)
  • 1 large egg, beaten
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 tablespoon chopped fresh parsley, for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  2. Heat olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 5-7 minutes.
  3. Add the minced garlic to the skillet and cook for 1 minute more until fragrant.
  4. Add the sliced squash to the skillet. Cook, stirring occasionally, until the squash is tender-crisp, about 8-10 minutes.
