  • 1 pound potato gnocchi (store-bought or homemade)
  • 6 tablespoons unsalted butter
  • 12 fresh sage leaves
  • 1/4 cup grated Parmesan cheese (optional)
  • Salt to taste
  • Freshly ground black pepper to taste

Instructions

  1. Place a large nonstick skillet over medium heat. You want the pan hot enough to brown the butter quickly.
  2. Add the butter to the skillet. Let it melt completely. Watch it closely as it begins to foam.
  3. Continue heating the butter until the milk solids sink and turn a nutty brown color, releasing a fragrant aroma. This is your brown butter.
  4. Immediately add the fresh sage leaves to the brown butter. They will crisp up fast. Cook for about 30 seconds until the leaves are crisp. Remove the sage leaves with a slotted spoon and set them aside for garnish. Keep the brown butter in the pan.
  5. Increase the heat to medium-high. Add the gnocchi to the hot brown butter in a single layer if possible. Do not overcrowd the pan.
  6. Cook the gnocchi without stirring for 2 to 3 minutes until the bottom side turns golden brown and develops a crisp exterior.
  7. Gently toss or flip the gnocchi. Cook for another 2 to 3 minutes, tossing occasionally, until most sides are golden and slightly crisp.
  8. Remove the skillet from the heat. Season the gnocchi with salt and pepper.
  9. If using, toss with grated Parmesan cheese.
  10. Serve immediately, garnished with the crispy sage leaves.

Notes

  • For the best crisp, use good quality, dry gnocchi. If your gnocchi seems wet, pat it dry before adding it to the pan.
  • Watch the brown butter carefully; it burns quickly once it starts to color.
  • You can add a squeeze of fresh lemon juice at the end for brightness, if you like.
